I only want to list one or two hotels in the accomodations section. How can I do that?

You can list just one or two hotels by just filling in the hotel sections you want to use and then deleting any placeholder text in the other hotel sections. This will make the additional hotel spaces then disappear. For one hotel, we recommend just filling in the second/middle section. For two hotels, we recommend filling in the first and third sections and leaving the middle on blank.
